    • You can add pumpkin seeds for some crunch. If you thinned out the soup some with more broth, I could see sautéed veggies, maybe corn, greens chopped thin, scallions, tofu or chicken sliced thin. Honestly endless possibilities, what do you like? Add it in.

    • Cut in half, scoop out the seeds, coat in oil with a little salt and pepper, maybe some sage, and roast in the oven. It’s delicious as a side dish! You can also steam it and eat that way, use cubed in a stew or curry, make butternut squash soup, etc. I use roasted butternut (just don’t add salt and pepper when cooking) to make pie, too (similar to pumpkin pie).
