  1. How would maple syrup “go bad?” It’s basically a sugar syrup. Sugar doesn’t go bad, honey doesn’t go bad. Have you ever seen a container of syrup or honey that fermented or had spoilage throughout? I will answer that for you. No, you haven’t because it is impossible.

    I have had jars of preserves that developed some mold on the surface, where there is air in contact with it. Eh, I take the mold off, throw it away, eat the preserves anyway. With maple syrup or honey I have never seen this, have you?

    Sugaring is one old method of food preservation, just like salting, dehydrating, smoking, spicing, freezing. (I may have left a couple out.) You might have some more details to add to this question. Spoiled syrup is something I have yet to see. I don’t even know what that would look like or taste like, because it is impossible!

  2. I make maple syrup. I collect maple syrup. I wrote master thesis on the history of maple syrup in Canada. If the syrup has between 66 and 67.9 percent sugar by volume, is packaged in a sterile container with an airtight lid, and is bottled using sterile equipment at a temp of not less than 190 F it, and is stored in a cool dark place it will not spoil. Maple syrup spoils when mold grows on it (you can scrape the mold off and then boil it (boiling will cause sediment to form, the sediment has the consistency sand but it will not make you sick) or by fermentation. The formation of sugar crystal does mean the maple syrup is bad for you, but it will change the consistency and taste. The accumulation of sediment on the bottom of a bottle of maple syrup does not mean it has spoiled. It means the syrup was not filtered as well as could have been or the syrup was too hot when bottled. Sediment forms every time the syrup is boiled. Again, the sediment is not harmful. As noted below, once opened syrup should be stored in the fridge in a closed container and should ideally be consumed in about six months of opening for best flavour. I have consumed older syrup. You may interested to know that if you are eating Quebec maple syrup it most likely was stored in one of the producers cooperative warehouse for 5 years, in a 45 gallon drum, before it was even bottled and sent to market. Pure maple syrup contains sugar, water, flavonoids and trace minerals such as calcium and iron. There are no proteins or fats. Fermentation, mold (no leathal according to dozen 70 year farmers I interviewed), and sugar crystal formation are the only ways for properly made maple syrup to spoil. If you freeze or recan maple syrup do not boil the syrup or sediment will form when it cools. Heat it to 190 degrees f then bottle it in sterilized jars.

  4. Thank you for the A2A. This answer applies only to pure maple syrup. It does not apply to table syrup.
    Properly made, bottled, and stored, maple syrup takes a very long time to spoil. Maple syrup is 66.5–67.9 percent sugar so it it is resistant to spoilage. It is hot bottled, which ,means the syrup is between 190 and 200 degrees F, when bottled, which starlike so the bottle when filled. The bottle is filled to within a 1/4 of one inch to the top (as the syrup contracts as it cools and the bottle looks “short” otherwise) and it is capped with a self sealing cap turned upside down for 30 seconds to seal the cap and then allowed to cool.

    Unopenned syrup can last a vey long time. The Quebec Maple Syrup Producers Federation keeps a five year supply of maple syrup on reserve. So if you by maple syrup made in Quebec chances are it was boiled 5 years ago, and bottled six months ago.
    Once open, if it is kept sealed in a dark cool place (esp a fridge) it can last a few years.
    I have syrup on the self that I bottled 8’yeas ago that shows no signs of spoilage.
    How does it spoil. It canget mould. This is caused by improper storage, usually too much light and warmth. I have heard you can remove green mould and still eat th syrup, but I don’t recommend it.
    It can ferment. If this happens, the syrup was bottled cold and improperly stored afterwards. It will taste like vinegar, not wine.
    It can cyrstalize. I have had this happen. It usually happens if the sugar counter was above 70 percent when I made it. It takes 8–12 months for this to happen. I have added a lttile water and heat to fix this problem.
    If you don’t want your admitted expensive pure maple syrup to spoil:store unopened syrup in a dark cool place (no warmer than 72 degrees F;refrigerate opnned syrup with a tight cap on the bottle (refrigerators with evaporate water from the syrup and cause crystalization (my experience is this process starts around 6–8 months.

  5. True maple syrup will not spoil, it has an almost indefinite lifespan. The sugar concentrate is high enough that it is a natural preservative. Left at room temperature it may get a little bit of mold on it, but just scrap it off with a spoon and it’s fine. It’s possible that like honey, it may crystallize. Warm it for a few seconds in the microwave (uncovered) and it will be liquid again.
    Once you have opened the container, maple syrup really should be refrigerated.
